Why is water served with espresso?

How can you recognise a good café? Order an espresso: if it is strong and concentrated and comes with a glass of water, it may be worth returning. Should you drink the water before or after the espresso? And why is it served at all?

Espresso is the foundation of many coffee drinks: a concentrated way to experience the beans’ flavour, aromas, acidity, bitterness, body and texture. Coffee contains a remarkable variety of aromatic compounds. A well-brewed espresso highlights the characteristics of the coffee beans used.

How you drink it also affects the experience. A small glass of still water, preferably at room temperature, is a traditional accompaniment. In Italy, where this custom is familiar, it may simply be tap water; in Poland, still mineral water is common.

Choose neutral-tasting water so that its own flavour does not interfere with the coffee. Some places serve sparkling water, although its bubbles and acidity can change how the espresso tastes.

Why serve water with espresso?

The main purpose is to refresh the palate. A sip of water clears away lingering flavours from other food and drink so you can appreciate the espresso more clearly. The principle is similar to rinsing the palate during wine tasting.

Before or after the espresso?

If your aim is to prepare the palate, drink the water first. This allows you to enjoy the coffee’s deeper flavours without other tastes getting in the way. Small sips between tastes of espresso can also help you explore its aroma and flavour.

Other people prefer water afterwards. Espresso leaves a strong, lingering taste, and water refreshes the mouth before another dish or drink. It can also simply quench your thirst.

Another traditional explanation is that water should precede coffee on an empty stomach. This is a cultural belief rather than a guarantee that water prevents stomach discomfort; individual tolerance to coffee varies.

Whether you drink it before, after or alongside your espresso, a glass of still water is a useful companion for appreciating the distinctive flavours of the beans in your cup.
