How to make excellent coffee at home

At home, with friends or during an evening with a book, you can enjoy truly good, aromatic coffee. All it takes is a little knowledge, high-quality beans and a touch of care.
Brewing coffee is a ritual, and there is something rather magical about it. A few basic principles help you make a great cup at home. There are plenty of methods, and everyone can develop a personal recipe. Here is what to remember.
High-quality coffee beans
The beans are the most important ingredient. Choose high-quality beans that are fresh, well roasted and suited to the strength and flavour you enjoy.
Grind just before brewing to make the most of the coffee’s aroma and character. Keep the remaining beans in tightly closed packaging in a cool, dry place, and grind only what you need.
You can buy good beans in delicatessens, specialist coffee shops and cafés, or directly from a coffee roastery. A roaster can help you explore different origins and roast levels.
Clean, pleasant-tasting water
Water has a major effect on the cup. Use fresh, safe drinking water with a pleasant, neutral taste. A suitable carbon filter can reduce chlorine and some unwanted tastes, though it does not remove every possible contaminant.
For many manual brewing methods, start with fresh water heated to just below boiling, around 90–97°C, and adjust for your beans and method. Follow the instructions for equipment that heats water itself.
Your brewing method
The method strongly influences aroma, strength and texture. Options include immersion, paper filtration, Turkish-style coffee, filter and espresso machines, and moka pots.
For a strong, aromatic cup at home, a moka pot or espresso machine is an appealing choice, though they produce different drinks. Other methods can be just as rewarding.
Whichever you choose, keep jugs, filters and all brewing tools thoroughly clean. Old residues and deposits can noticeably spoil the next cup.
Serving your coffee
There is no single perfect presentation: serve it the way you enjoy most. Good porcelain cups, warmed before pouring, help keep the drink pleasantly hot.
Some coffee lovers prefer no sugar, milk or additions so they can experience the beans’ flavour directly. Espresso also makes a useful base for drinks with water or milk, adjusted to taste.
Milk, cream, cardamom, flavoured syrups and other spices offer plenty of ways to vary your cup. What is your own recipe for the perfect coffee? Share your favourites.
